This wine was produced from 65% Shiraz grapes from the Kfar Yuval vineyard (Upper Galille), 30% Cabernet Sauvignon and 5% Petit Verdot.
When the Shiraz grapes arrived at the winery they were chilled to 14 °c for a cold maceration, in which color and aroma are enhanced. After 3 days of maceration, yeasts which contributed strong fruit aromas and tannin were added. The grapes were fermented for 10 days, followed by just a light press. The Cabernet Sauvignon and Petit Verdot were fermented and aged separately in barrels. After a period of six months in the barrels, during which the wines’ flavors stabilized, the final blend was determined in order to receive complexity and harmony. After creating the final blend, the wine was returned to the barrels to age for an additional eight months. The wine was aged for 14 months in oak barrels, half of them French and half American.
This is a robust Shiraz with a deep maroon red color and purple edges. The wine is full bodied and round, with an aroma of black berries, eucalyptus, mint, toasted wood and ripe red fruit. The wine has a massive, dense flavor which is concentrated and balanced with ripe, sweetish tannin. The finish is long, with an abundance of black fruit flavors.
