This wine was produced from 86% Cabernet Franc grapes grown in the Mata vineyards near Jerusalem, 7% Merlot grapes and 7% Cabernet Sauvignon grapes from the Upper Galilee.
The grapes went through alcoholic fermentation for some two weeks and rested atop the grape skins for an additional number of days. The grapes were only lightly pressed before being transferred to barrels for ageing.
The Merlot and Cabernet Franc grapes were fermented and aged in separate barrels. After a period of six months in the barrels, during which the wines’ flavors stabilized, the final blend was determined in order to receive complexity and harmony. After creating the final blend, the wine was returned to the barrels to age for an additional eight months. The wine aged in 90% French oak barrels, with 10% American oak barrels.
This wine has a very deep maroon red color and pomegranate edges. The wine is full-bodied with a festive aroma of purple flowers, grass, green pepper, ripe red and black fruit and a bit of toasted wood. Its flavor is at once robust and round, invigorating and fruity. The tannins are gentle and piquant, with a long finish that is full of life.
