This wine was produced from 100% Cabernet Sauvignon grapes grown in the Kfar Yuval vineyards, which are considered to be the northernmost vineyards in Israel.
The grapes were selectively harvested by hand from the vineyard’s choicest plot in the early morning hours. The wine was fermented with the aid of cultivated yeasts for a period of two weeks in a slow and controlled process, without releasing much heat (in order to perfectly preserve the characteristic fruity aromas) and then rested on the skins for an additional number of days. Upon completion of the initial fermentation, the wine went through a light press.
Only the free run liquid remained for a second fermentation and for the subsequent six months of ageing in oak barrels, 80% of them French and 20% American oak.
The finished wine has excellent soft, pleasant tannins and good acidity. It has a glittering maroon red color.
The aroma is fruity and characteristic of the Cabernet Sauvignon variety.
