This wine was produced from Cabernet Sauvignon grapes from Alma vineyard (upper Galilee), combined with Cabernet Sauvignon grapes from Karmei Yosef (Judean hills) in equal quantity, with the addition of 5% Petit Verdot.
Pre-fermentation, the grapes went through cold maceration for a few days, in order to attain deep color and aroma.
The grapes went through alcoholic fermentation for some two weeks and rested atop the grape skins for an additional number of days. Then the wine went through a light press. Only the free run liquid was transferred for a second fermentation.
The wine was aged for 18 months in new “Seguin Moreau” type French oak barrels and remained in the ageing room for an additional number of months before being marketed.
The wine is characterized by a deep maroon red-purple color, aromas of cherry, cassis and black fruit with a dash of vanilla, black pepper and toasted wood. The wine has a full round flavor with soft tannins and a long, pleasurable finish.
